Herkomst
Situated 160km to the east of Cape Town in the Breede River Valley region. The dry, medium hot climate of the area is optimal to produce premium grapes. The high diurnal temperature, i.e., the difference between the daily maximum and minimum temperature, aids in cooling the grapes down sufficiently at night and facilitates a homogenous dormancy periodduring the cold winter months. Immersed in limestone-rich soils, the vineyards add a chalky minerality and a flinty finish to the wine, reminiscent of the great Chardonnays of Chablis in France.

Winemaking
The grapes were harvested by hand, whole bunch pressed and transferred to French oak barrels (30% new and the balance made up of 2nd and 3rd fill oak) where it underwent spontaneous fermentation. The wine was fermented and matured in oak for a total period of 12 months, with lees stirring twice a week to enhance the texture. Only 20% underwent malolactic fermentation to retain the freshness. After bottling, the wine was aged for a further 12 months prior to its release.

Tasting note
A classically styled Chardonnay, with luscious aromas of lemon verbena, cling peaches, yellow citrus peel, orange blossoms and freshly baked bread. The palate displays fleshy stone fruit characters, and the rich and creamy texture is balanced by a bright seam of acidity. Flavours of grapefruit and subtle yeasty undertones add further interest. A complex wine with lingering flavours of lemon, lime and white peach on the finish.

Most opulent of these, showing ripe Golden Delicious apple along with lemon & lime freshness in 2021. Excellent balance, layers of creamy granadilla curd & grapefruit pith giving exceptional presence & depth. 2020, also tasted, a little leaner & very food-friendly.
