Winemaking
Only the healthiest berries from hand-harvested grapes made it into the small, open-top fermenters where they were fermented on the skins. During fermentation, pump-overs were performed twice a day to extract the ripe, round tannins and the maximum amount of colour pigment. To ensure that the fruit is the main attraction, the wine was aged in 3rd and 4th fill French oak barrels in order to limit the influence of oak-derived characters.
Tasting note
Deep, ruby-red hues with typical Cabernet aromas of tomato leaf, cassis, Fynbos shrub, fresh bouquet garni and a touch of graphite. The use of oalder oak ensures that the primary focus on the mid palate is aimed at the bright raspberry- and plum fruit characters. The tannins are well integrated and round. A medium-bodied wine with delicate flavours of plums, blackcurrants and fresh herbs on the dry finish.

Paarl grapes produce youthfully ruby-hued 2020 showing textbook blackcurrant, tomato & tealeaf in a well-structured body, tannins supple & polished in older oak. Balanced, with graphite minerality on the expansive farewell.
