Vinification
All varieties were hand-harvested and fermented separately. Pump-over and punch downs twice a day ensured the soft extraction of tannins and flavours. The wines finished the malolactic fermentation in stainless steel before maturation in 3rd fill barrels for 16 months. The wine were lightly fined before bottling
